PEANUT BUTTER BANANA BREAD

I’ve always loved moist banana bread, but I especially love this recipe because of the yummy crunch on top. The banana and peanut butter combo is delicious! Great way to use those bananas that are browning on your shelf, and a recipe that the whole family will love. Naturally sweet, a peanut-y crunch, and a touch of dark chocolate. Enjoy!

INGREDIENTS

2 ripe bananas
⅓ cup natural peanut butter (Adam’s or Kirkland brands are my favorite)
¼ cup maple syrup
2 flax eggs (2 tbsp flaxmeal mixed with 5 tbsp water, set aside for 15 min)
2 tsp vanilla
2 ½ cups almond flour
2 tsp cinnamon
1 tsp baking soda
¼ tsp salt
½-1 cup chocolate chips (I use Lily’s)
2 tbsp crushed peanuts 
Sea salt for topping

INSTRUCTIONS

  1. In a small bowl, prepare the flax eggs by mixing together 2 tbsp flaxmeal and 5 tbsp water. Set aside for 15 minutes, it will thicken like egg consistency.

  2. Preheat oven to 350 F degrees. Spray a loaf pan with cooking spray.

  3. In a medium bowl, mix together almond flour, cinnamon, baking soda, and salt.

  4. In a separate bowl, whisk together mashed bananas, peanut butter, maple syrup, flax eggs, vanilla, and chocolate chips.

  5. Add dry ingredients to wet ingredients and stir until completely combined. Mixture should be slightly lumpy.

  6. Pour mixture into the loaf pan, then add peanuts, chocolate chips, and sea salt on top.

  7. Bake for 45-50 minutes or until toothpick test comes out clean.
